Featured Recipe: Bacon Corn Dog Cupcake

Hello my dear baconnections! I hope this Tuesday is finding you happy, satisfied, and full of bacon.  If not, I suggest you remedy that immediately.  On to more important things:  it’s Tuesday so you know that means here at the Pig Pen it’s RECIPE DAY!  Is there anything I love more than a good bacon recipe?  A question for another time…

Our good friends over at Epic Meal Time (well, we’re friends in my head at least…) have done it again.  Ladies and gentlemen, baconeers and baconettes, hog heaven enthusiasts and pork producer pals, EMT gives you (drumroll please) the BACON CORN DOG CUPCAKE.  That’s right.  Is it a corn dog or a cupcake? Who cares?! It’s filled with that luscious lipsmacking meat we Baconeers crave on a daily (ok hourly) basis.  The video is over 4 minutes of pure bacon heaven, but to make things easier for the Baconeers, I’ve transcribed the recipe right here.  Be sure to give a shout-out to EMT on Twitter (or us, we really like the attention) and let us know how your Bacon Corn Dog Cupcakes turned out!

Bacon Corn Dog Cupcakes

Ingredients and Tools:

  • 2 cups of yellow corn meal
  • 1 cup of all purpose flour
  • 5 hot dogs
  • 1 tablespoon of baking powder
  • 1 teaspoon of baking soda
  • ½ teaspoon of salt
  • ¼ cup of honey
  • 1.5 cups of buttermilk
  • 2 large eggs
  • ¼ cup of cooking oil
  • 1 pack of bacon
  • Cooking spray
  • 2 mixing bowls
  • 1 muffin tray
  • 1 frying pan
  • 1 whisk


Preheat the oven to 425 degrees.

  • Step 1: Cut the bacon into small bits
  • Step 2: Fry the bacon on the frying pan until nice and crispy
  • Step 3: Mix together all the dry ingredients into a bowl
  • Step 4: In a separate bowl, mix together the wet ingredients (buttermilk, oil, eggs, and honey)
  • Step 5: Slowly pour the dry ingredients into the wet ingredients bowl. Mix while doing so.
  • Step 6: Add the bacon bits to the batter mixture
  • Step 7: Dice 5 hot dogs into bits and add them to the batter
  • Step 8: Add 2 tablespoons of batter to the muffin tray
  • Step 9: Put the muffins into the oven for 15 minutes
