Bacon Cheeseburger Tacos

This recipe needs little introduction. If your taste buds don’t start to water, your heart beat quicken, and your mind begin to race when you read the phrase “Bacon Cheeseburger Tacos,” then this probably isn’t for you.

But all of that probably already happened because, let’s face it, you’re human and you just read the phrase “Bacon Cheeseburger Tacos.” Read on for the full recipe from our friend Molly at Yes to Yolks.


For the Ground Beef Mixture:

  • 6 slices of bacon
  • 1 lb lean ground beef
  • 1 tablespoon taco spice mix
  • 1 tablespoon ketchup
  • 1 tablespoon mustard
  • 2 teaspoons Worcestershire sauce
  • 2 tablespoons pickle relish
  • Salt and pepper, to taste

For the Cheese Sauce:

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup milk
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • Salt and pepper, to taste

For the Tacos:

  • The ground beef
  • The cheese sauce
  • The cooked bacon, crumbled
  • Sliced avocado
  • Chopped tomatoes
  • Shredded Romaine or iceberg lettuce
  • Thinly sliced radishes
  • Fresh parsley or cilantro, chopped
  • Fresh lime wedges
  • Flour or corn tortillas, warmed or toasted


The best way to break down this awe-inducing platter of bliss is to complement each aspect of the overall concoction individually. While making this, you can tackle each set of steps all at once or one-at-a-time, although the main objective is refusing to allow it to get cold.

For the Ground Beef Mixture:

  1. Place a large skillet on the stove and begin work on the most important ingredient: bacon. Cook until it is marvelously crispy and perfect.
  2. Once the bacon is fully cooked, remove it from the pan and set it aside until later. (Try not to eat it, please.)
  3. Using a large skillet, add and cook the ground beef for five minutes. Make sure to break up the chunks. And no, this is not a good time to show the world how well you can flip food in a skillet.
  4. After a few minutes, you want to show the world you have matured into an Adult™ by adding flavor. Add taco spices, ketchup, mustard, Worcestershire, and pickle relish to the ground beef. Mix well.
  5. Continue to cook the ground beef for five minutes. It should have a saucy quality to it.
  6. Add your personal pepper and salt preference to the mix and put it aside.

For the Cheese Sauce:

  1. Add butter to a saucepan. Heat on medium until the butter melts.
  2. Add flour to the melted butter and whisk. Make sure to mix well and then cook for two minutes. (Don’t worry; you are getting closer to eating.)
  3. Then, add milk to the mix, making sure to whisk constantly. Continue to cook for a few minutes. The sauce should be able to coat a spoon.

  1. Next, add in the cheese. Cook until it melts and then add pepper and/or salt to taste. Just don’t overshadow the bacon.
  2. Keep the sauce warm while you complete the last set of steps.

For the Tacos:

  1. Now add the ingredients to the tacos. That’s it. What are you still waiting for?
